So my sister Emily had this idea to help us married girls out with dinner ideas. When you make something you enjoyed for dinner, take a picture and post the recipe on your blog, that way we can all get new, delicious dinner ideas!
So here was mine and Jordan's dinner last night. These are chicken enchilladas, which I love! I got the recipe from my mother, and it is delicious
Melt in a sauce pan 1/2 cube of butter. Cook a chopped onion in the butter till it is clear. Add 2 cans of cream of chicken soup, 1 cup of sour cream, 1 can diced green chilies. Add about a half can of milk to thin the mixture.
Dice cooked chicken.
Grate some pepper-jack cheese.
Pour a little bit of the sauce in the bottom of a casserol pan.
You will need a package of flour tortillas.
Spread sauce on individual tortillas, then in a center strip place some chicken and top with shredded cheese. Roll tortilla and place in casserol pan. Repeat with remaining tortillas. Top the tortilla's with remaining sauce and cheese.
Bake @ 350 for about 30 minutes, and serve with shredded lettuce and tomatoes.

We also had it with chips and salsa, and I put sliced olives on top too.
