Enchilladas.

This is my most favorite meal!
(Well, one of them)

But they are delicious!
This is my grandma Parry's recipe! You'll love it. But just a prewarning, if you make this meal, it makes enough for probably a party of 25.....
.....But left-overs are great! And it freezes well too!


Recipe:
3 LBS Hamburger
3 Onions
3 Green Peppers
2 Big cans Tomato Juice
4 Fresh Jalapenos
1 Pkg. Dry Chicken Noodle Soup
1 pint salsa (homemade)
1 TBS Chicken Flavor
1 TBS Chili Powder
Brown meat. Grind onions, peppers, and jalapenos; add 1 can tomato juice. Add pepper and juice mixture to meat.
Cook Soup, and pour into mixture. Add salsa and last can tomato juice.
Last, add chili powder and chicken flavor.
Let simmer for about 3 hours.
Thicken before serving with flour/water, or cornstarch/water.
Tortillas:
1 cup flour
1 cup cornmeal
1 tsp salt
1 egg
3 TBS oil
water
Make this batter thin! Beat together all ingredients. Pour 1/3 cup batter on skillet. (Make thinner than a pancake!)
How I like to assemble:
Totilla
Sauce
Cheese
Lettuce
Tomato
Sour Cream
And of coarse, salt and pepper
Yum, enjoy!
